Recipe for banana loaf

Sometimes you look in the fruit bowl and think ‘ugh’ the fruit flies are imminent, haste ye’ not, don’t throw it out use it!
Most fruits can be used for some sort of cake, with some meats or cheese but this is not a savoury blog its all about the sweet stuff!
My fruit bowl was full of brown bananas, for some reason the kids decided last week that they were uninterested in them anymore, what to do… oh lets make cake! A quick search in the world of google and the usual putting several banana loaf /banana bread recipes together to match ingredients that A-are in the cupboard and B- can be made into an ‘All Mixed Up’ easy baking mix.
SO here it is Banana Loaf!
You will need a loaf tin which you can add a loaf liner  or line with greaseproof paper. If you don’t have that then you can use a cupcake tin and cupcake cases and make muffins.
Preheat oven to Fan160/conv180/gas4

  •           150g butter, softened, (plus extra for the tin if using greaseproof paper)
  •           130g caster sugar
  •           20g soft brown sugar
  •           2 large eggs, beaten
  •          150g self-raising flour
  •          1 tsp baking powder
  •          2 very ripe bananas, mashed

-Cream (beat until really soft) the butter
-Add sugar, flour, baking powder and eggs, mix until its nearly combined then add the banana until all combined
-Pour into loaf tin or separate into mini cases.
-For a loaf bake for around 30/40mins or muffins for around 15/20mins but check by putting a skewer in and if it comes out clean then they ready
-leave to cool in tin for around 10 mins and remove to cooling rack

p.s I also made a banana loaf without any sugar (by accident) and it still turned out fine, just not sweet!
